We take every bone left behind after butchering our hogs and roast them until they’ve caramelized evenly. Then we add enough water and aromatics and let it simmer for an entire day, yielding this gelatinous and flavor bomb of a stock. Use it for soups, sauces, braises or even dog food toppers ( in very small quantities).
